The Battle Creek Food Company BATTLE CREEK, MICHIGAN Choice Recipes Tested by Dietitians at the Battle Creek Sanitarium Gluten Bread 2 1/3 cups 44.81% Gluten Flour 1/2 teaspoon salt 1 cup warm water 1 yeast cake (compressed) Put the yeast to soak in 2 tablespoons of additional water. When softened, add the remainder of the water and salt. Add the flour and knead thoroughly for at least 20 minutes. Mold, place in a buttered bread pan and let rise at ordinary kitchen temperature until loaf has doubled its bulk. Then place carefully in the overn and light the gas but do not turn on full force. Bake in a moderage over from 3/4 to one hour. This amount makes one small loaf. Gluten Gems 1 1/2 cups milk 2 eggs 1/2 cup cream (for diabetics use 2 cups cream and no milk) 1pt. 44.81% Gluten Flour 1/2 teaspoon salt Whip the milk and cream briskly. Add the well beaten eggs. Whip again for a few seconds. Add the flour Gradually, beating with a wire whip. Beat vigorously for 20 minutes after the flour has been added then add the salt.
